Slow Food & Wine

The slow food movement began in the 1980s in Italy, as opposed to fast foods. This movement is extremely important for gastronomy, for wine and for a sustainable economic model. It represents a great step towards maintaining our health and the health of our planet. We may consider slow food as a climate change mitigation movement, an issue that  concerns especially wine producers. There is a growing effort to adopt sustainable practices that have a lower impact on the environment and ensure that future generations can enjoy the same quality and quantity of resources (environmental services, food, wine, etc.). The movement consists of a set of guidelines throughout the food production chain (from the beginning of production to the separation and recycling of waste), so that there is an approximation between producer and consumer. Slow Food seeks to value local and seasonal products, denominations of origin (DOC and PDO does not exist only for wines), conservation of not only biodiversity but also traditions, always using organic products.

Food and Wine

The haute cuisine seeks the greatest and freshness of the ingredients. Common sense considers it almost or indeed a scientific process, ruled by tradition. It is the rescue of the cuisine of our grandparents and great-grandparents and of how nature (fauna and flora) can work in our favor. It is the law of return. Food and wine have to be together. The fine wine producer knows that the quality of his wine comes from his vineyard, from the quality of his grape (organic or low intervention vineyards contribute to the improvement of the quality of the grape) and all the procedures that will guarantee the expression of that terroir. And the terroir is not only a territory, it is a sum of the composition of the soil, the slope of the terrain, the incidence of rainfall and sunlight, the presence or not of sea breezes, latitude, longitude and all that will contribute to the authenticity and personality of a wine of that origin.

There is no better way. We need to respect and value ourselves, our children, our home (Earth), our territories and people. Be part of this movement and take care of your health, because the most expensive bill in the world comes from the hospital.
